Preheat oven or toaster oven to 400°F. Place @bacon{3%oz} in a #large pan{} over medium-high heat. Cook until crispy ~{3-5%minutes} per side. Remove from pan and set aside on a paper-towel-lined plate. Pour out and reserve the bacon grease.

In a #small bowl{}, combine @ketchup{2%tbsp} and @chipotle powder{½%tsp} to taste, starting with a pinch and adding more as desired.

Split @brioche buns{2%unit} in half and place on a #baking sheet{}. Sprinkle the flat side of each half with @Monterey jack cheese{2%oz}. Toast in the oven until the cheese has melted and buns are golden brown and slightly crispy ~{4%minutes}.

Heat a drizzle of @vegetable oil{1%tbsp} or the reserved bacon grease in the same #large pan{}. Crack @eggs{2%unit} into the pan and cook sunny-side up to your desired doneness ~{3-5%minutes}.

Halve @lemon{1%unit}. Toss @arugula{2%cups}, a drizzle of oil, and a squeeze of lemon juice in a #bowl{}. Season with @salt{1%pinch} and @black pepper{1%pinch} to taste.

Spread the plain sides of the brioche buns with the chipotle ketchup. Fill each with bacon and an egg. Serve with the salad on the side. You can add a little bit of the salad into the sandwiches if desired.
